Weight Watchers Recipes

Report: I have lost 9.8 pounds in the last 3 weeks doing weight watchers! Ben has lost 14 pounds! We are happy with the results, thus far, and are happy with the food we are eating. At first I thought it was going to be impossible to find good food, good recipes, that I actually liked, and had good flavor... I have to post a few recipes, cause I liked them so much, and I thought others would like them too! I hope you all enjoy!

Spaghetti Squash with Meat Sauce

Servings: 6 Serving Size 8.75 oz sauce Time: 1 hour Points: 4.6 WW Points

(the spaghetti squash is 0 points, it's the sauce that makes the points!)


1 large spaghetti squash
salt and pepper



Meat Sauce Recipe:
1 lb 95 % lean beef
1 tsp butter
(4oz) 1/2 onion, finely chopped
1 carrot, peeled and chopped
1 celery stalk, finely chopped
1 28 oz can of crushed tomatoes
1/4 cup fat free chicken broth
1 bay leaf
Salt and Fresh pepper


Preheat oven to 400 degrees. Cut spaghetti squash in half lengthwise and scoop out seed and membrane. Season with salt and bake 1 hour on baking sheet, cut side up.


In large deep saute pan, melt butter and oil. Add onions, celery and carrots and saute on medium-low for about 2-3 minutes, until soft. Add meat and season with salt. Brown meat and breakdown into smaller pieces with your spoon. When meat is cooked through, add tomatoes and adjust salt and pepper to taste. Add chicken broth and cook until it reduces a bit, then add bay leaf, and cover, reducing heat to low. Simmer at least an hour, stirring occasionally.


When spaghetti squash is cooked, let it cool for about 10 minutes. When cool, use a fork to remove flesh, which will come out in spaghetti looking strands. Keep covered and set aside keeping warm until the sauce is ready.


Serve sauce on spaghetti squash, with cheese on top (optional!)





Chicken Cordon Bleu

SERVINGS: 12 pieces SIZE: 1 TIME: 40 minutes POINTS 5.5 WW points



4 chicken breast halves
2 eggs
1 tbsp water
3/4 cup seasoned breadcrumbs
12 slices thin deli ham
12 slices reduced fat Swiss Cheese (I used Sargento)
salt
spray oil
toothpicks


Preheat oven to 350 degrees


Slice chicken breast halves into thin cutlets. I usually get 3 thin cutlets out of one breast half. Pound them to make them thinner if you wish. This helps when you crap the cutlets


Cut each slice of cheese into squares and stack on top of each other. Place the slice of ham on top of the chicken, top with cheese and wrap chicken around to completely cover cheese, using toothpicks to secure. (Make sure no holes so cheese doesn't leak out) Season with salt.


Combine the eggs and water, beat.


Dip Chicken into egg wash, then bread crumbs


Spray cookie sheet with oil and place chicken on cookie sheet. Lightly spray chicken with oil and bake about 25 minutes until cooked!

The only thing is the photos are copyright, so in the future if you want to use another recipe, just don't use the photos. Thanks and good luck with weight watchers!

I'm thinking of joining weight watchers to get rid of the rest of this baby weight plus a lot of fat. Is it very hard to understand and follow?
